Ok - we had another CROCK POT success. Recipe to be posted separately in food thing section (for Barbacoa Beef). We tweaked a recipe from Epicurious.com.
All I could think about was how CRUEL it was to LUCY/DOG all day to smell that incredibly, beautiful, juicy smell of total yum. Total canine crock pot cruelty!?
NOTE: I think part of the success of the crock pot is directionally related to the amount of pre-work/thought involved. On this particular recipe, we had to marinate the ingredients overnight. Then I had to sear the meat in the morning before putting it into the crockpot. (Make pancakes, sear meat, make lunches; yeah, whatever.)
THEN H insisted on separating the meat and juice/sauce, pureeing it and making a separate sauce (with extra garlic and chipotle).
All I can say is it was frickin good, smelled frickin delicious. Amazing. I really don't have a problem wiht the extra work. Or the fancy ingredients. I'm totally good with that. I just want to come home to YUMMY food -- even when I come home late or have a super-human day.
Love that. Multi-tasking at its best, right?
